Yeast waffles come out a little flaky and slightly chewy,
much like drop biscuits. Some people prefer these because no eggs
are needed for the batter.
Yeast Waffles
Feeds 6
You will need:

A waffle iron (American or German cup or shaped irons are best for these)

3 cups of flour
-
1 tablespoon dry active yeast

1/2 tsp. baking soda (also called drinking soda or sodium bicarbonate)

1 tsp salt
-
1/4 cup sugar
-
1/2 cup shortenning, softenned butter, lard, or vegetable oil
-
1 and 1/2 to 2 cups of lukewarm water...maybe a little more.

1 tsp vanilla extract
-
(optional) 1 tsp cinnamon, 1/4 tsp allspice (English pepper), and 1/2 tsp
ginger
Directions:

Put the dry ingredients including the yeast in a bowl, and aerate them
with a mixer or a wire whisk.

Cut in the shortenning or oil with a fork or two knives or a pastry cutter,
until the mixture looks like a coarse meal.

Gradually stir in the water until it becomes an only slightly lumpy, wet
batter.

Let this set for about 15 minutes in a somewhat warm place.

Check the batter again to make sure that it's not too solid to pour.
If it is, mix in a little more water until it is liquid again.

Let it set for another 15 minutes.

Heat your waffle iron.

Grease your iron and pour the waffles so that it covers all but about the
outermost 3 cm. because they will rise.

When they're golden brown, take them out.
